If I right-click the icon in the tray, I get a list
of programs and their memory usage.
But when I hit <Alt> + "PrintScreen", the image that I
want to save disappears when I hit the <Alt> key.
If I hold the <Alt> key down while I click on the tray
icon, the image DOES come up, but then when I then also
hit "PrintScreen", nothing is saved to the clip board
for me to copy. Any suggestions? Thanks

Try some software that as a delay between capturing and the actual capture like MWSnap

If you set the screenshot to a delay of 2000ms before snapping it will capture the MemInfo tray menu if you open it fast enough
